Quick & Easy Mole Rojo

  • 16 Mixed chiles (ancho, pasilla, guajillo)

  • 2 yellow onion, chopped

  • 8 cloves garlic

  • 2 large tomatoes

  • 2 Tablespoons dried oregano,1 teaspoon cloves, ½ tsp cinnamon, 2 Tablespoons piloncillo, salt, 2 tsp cocoa powder, tomatoes ½ cup oj, 1 cup chile liquid, ½ cup mixed almonds, pumpkin seeds, peanuts

  • 2 T veg oil

Method:

Pour boiling water over chiles and soak for 15 minutes to soften. Meanwhile, put onion, & garlic into a dry saute pan and cook for 5-10 minutes, stirring occasionally. Add dried spices, sugar and cocoa powder and stir to combine. Add to the blender with drained chiles, oj and chile liquid. Blend thoroughly. 

Heat oil in large sauce pan, then add the contents of blender. Cook until flavors combine.

Serving suggestion:

Serve in a flat bowl, with golden fried masa cups filled with black beans and pico de gallo.
